Macaroni and Cheese is the ulitmate comfort food. Its warm , carby, cheesy and reminds us of the good old days when Mom made us the heaven in the blue box.. Kraft Macaroni.. or for a real splurge Velveeta..... mmmm those were the days. Now a days we think about that cheesy wonderful meal as a kid only dish that will put our diet back days and be way to many carbs and fat grams to deal with. That is unless you are blessed with a model body and superhero metabolism. I have sought to transform Mac n Cheese to Skinny Mac- a dish you can enjoy without feeling the urge to run 10 miles, do 100 pushups/ situps or just get down on yourself for eating badly! So chin up Mac and Cheese lovers I got your back!
1 1/4 cups uncooked whole wheat macaroni
2 cup 1% low fat milk
1 1/4 cups shredded reduced fat cheddar cheese
1 tablespoon butter
Cook pasta according to directions, boil and drain.
Heat butter in skillet and combine cheese and milk until cheese is melted. Put extra butter on macaroni, then pour mixture over macaroni. Mix until all the pasta is covered.
